A simple recipe for rich, dairy-free chocolate chia pudding made with almond milk and maple syrup, perfect for make-ahead breakfasts or snacks.

  • 1 cup unsweetened almond milk
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the chia seeds, almond milk, cocoa powder, maple syrup, vanilla extract, and salt in a jar or bowl.
  2. Stir the mixture well for about one minute to prevent the chia seeds from clumping at the bottom.
  3. Let the mixture sit for 5 minutes, then stir again thoroughly. This second stir helps achieve a smooth consistency.
  4. Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the pudding thickens.
  5. Stir the pudding before serving. Add more milk if the consistency is too thick for your preference.
  6. Serve chilled with your preferred toppings.

Notes

  • For a deeper chocolate flavor, use raw cacao powder instead of standard cocoa powder.
  • If you prefer a sweeter pudding, increase the maple syrup to 3 tablespoons.
  • Oat milk or soy milk work well as substitutes for almond milk.
