1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup non-dairy milk (such as almond or soy)
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon flaxseed meal mixed with 3 tablespoons water (flax egg)
1/2 cup vegan chocolate chips
Instructions
Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
In a separate bowl, whisk together the non-dairy milk, vegetable oil, vanilla extract, and flax egg.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the vegan chocolate chips.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chocolatey muffins, add an extra 1/4 cup of cocoa powder.
You can substitute the flax egg with other vegan egg replacers like applesauce or mashed banana.
