Make a vibrant, creamy hummus using roasted beets. This recipe is entirely plant-based and delivers a rich flavor and striking color.

  • 2 medium beets (about 1 pound)
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons water (or more, for thinning)
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Wrap the whole beets tightly in aluminum foil.
  2. Roast the beets for 45 to 60 minutes, or until they are easily pierced with a fork.
  3. Let the beets cool slightly, then rub the skins off; the skins should slip off easily. Roughly chop the roasted beets.
  4. Combine the roasted beets, rinsed chickpeas, lemon juice, olive oil, water, garlic, salt, and cumin in a food processor.
  5. Process the mixture until completely smooth and creamy. Stop and scrape down the sides as needed.
  6. If the hummus is too thick, add water, one tablespoon at a time, until you reach your desired creamy consistency.
  7. Taste and adjust salt or lemon juice if necessary. Serve chilled or at room temperature.

Notes

  • For extra creaminess, peel and add one small peeled potato or 1/4 cup of soaked cashews to the food processor along with the other ingredients.
  • Roast the beets ahead of time to save preparation time.
  • Use fresh lemon juice for the best flavor in your hummus.
