- 2 medium beets (about 1 pound)
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 tablespoons water (or more, for thinning)
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Wrap the whole beets tightly in aluminum foil.
- Roast the beets for 45 to 60 minutes, or until they are easily pierced with a fork.
- Let the beets cool slightly, then rub the skins off; the skins should slip off easily. Roughly chop the roasted beets.
- Combine the roasted beets, rinsed chickpeas, lemon juice, olive oil, water, garlic, salt, and cumin in a food processor.
- Process the mixture until completely smooth and creamy. Stop and scrape down the sides as needed.
- If the hummus is too thick, add water, one tablespoon at a time, until you reach your desired creamy consistency.
- Taste and adjust salt or lemon juice if necessary. Serve chilled or at room temperature.
Notes
- For extra creaminess, peel and add one small peeled potato or 1/4 cup of soaked cashews to the food processor along with the other ingredients.
- Roast the beets ahead of time to save preparation time.
- Use fresh lemon juice for the best flavor in your hummus.
