Prepare a rich and creamy pasta dish using a sauce made from roasted red peppers and hummus. This recipe is entirely plant-based and quick to make.

  • 12 oz pasta (penne or fusilli recommended)
  • 1 cup prepared roasted red peppers (jarred or fresh roasted)
  • 1/2 cup plain vegan hummus
  • 1/4 cup pasta water (reserved)
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions until al dente. Before draining, reserve about 1 cup of the starchy cooking water. Drain the pasta and set aside.
  2. While the pasta cooks, prepare the sauce. Combine the roasted red peppers, hummus, garlic, lemon juice, olive oil, salt, and pepper in a food processor or high-speed blender.
  3. Blend the ingredients until completely smooth. Add reserved pasta water, one tablespoon at a time, while blending until the sauce reaches a smooth, creamy consistency that coats the back of a spoon.
  4. Return the drained pasta to the pot over low heat. Pour the red pepper hummus sauce over the pasta.
  5. Toss gently to coat every piece of pasta evenly. If the sauce seems too thick, add a little more reserved pasta water until the desired creaminess is achieved.
  6. Serve immediately, garnished with fresh chopped basil.

Notes

  • For extra richness, you can add 1 tablespoon of nutritional yeast to the sauce mixture before blending.
  • If you roast your own peppers, char them over an open flame or under the broiler until the skin is blackened, then steam them in a covered bowl for 10 minutes before peeling.
  • This sauce works well with short, sturdy pasta shapes that hold the sauce, like rigatoni or farfalle.
