2 cups frozen strawberries
1 (13.5 oz) can full-fat oat milk, chilled overnight (only use the thick cream layer)
1/2 cup regular oat milk
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch or arrowroot powder
Instructions
Chill a metal loaf pan or freezer-safe container in the freezer for at least 2 hours.
In a small saucepan, whisk together the sugar and cornstarch. Slowly whisk in the 1/2 cup regular oat milk until smooth.
Heat the mixture over medium heat, stirring constantly, until it thickens significantly, about 5 to 7 minutes. Do not let it boil rapidly. Remove from heat and stir in the vanilla extract and lemon juice. Let this base cool completely to room temperature.
Scoop the thick cream layer from the top of the chilled full-fat oat milk can into a large bowl. Discard any watery liquid remaining in the can.
Add the cooled sugar mixture and the frozen strawberries to the oat cream.
Use an immersion blender or a standard blender to blend the mixture until completely smooth and creamy. Blend for at least 1 minute to incorporate air.
Pour the mixture into your prepared chilled pan.
If using an ice cream maker, churn according to the manufacturer’s directions until it reaches a soft-serve consistency. Transfer to the freezer to firm up for 2 hours.
If using the no-churn method, cover the surface of the ice cream with plastic wrap, pressing it directly onto the surface to prevent ice crystals. Freeze for at least 6 hours, stirring vigorously every 90 minutes for the first 4 hours to maintain creaminess.
Allow the ice cream to soften at room temperature for 10 to 15 minutes before scooping and serving.
Notes
For the creamiest results, use a high-fat oat milk designed for coffee or barista use.
If your strawberries are very sweet, reduce the sugar slightly.
If the mixture is too thick to blend, add one tablespoon of regular oat milk at a time until the blender moves freely.
