1 red onion, cut into thick wedges
1 red bell pepper, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1/2 teaspoon turmeric powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
For Serving: Pita bread, chopped tomatoes, cucumber, vegan tahini sauce
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the dried chickpeas, red onion wedges, and red bell pepper pieces.
In a small bowl, whisk together the olive oil, cumin, coriander, smoked paprika, turmeric, garlic powder, cayenne pepper (if using), salt, and black pepper to create the spice mix.
Pour the spice mixture over the chickpeas and vegetables. Toss everything together until the chickpeas and vegetables are evenly coated.
Spread the chickpea and vegetable mixture in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two pans if necessary for crispier results.
Bake for 20 to 25 minutes, stirring halfway through, until the chickpeas are slightly crispy and the vegetables are tender.
Remove from the oven and serve immediately with warm pita bread, fresh vegetables, and tahini sauce.
Notes
Drying the chickpeas well before seasoning is key to achieving a crispy texture. Pat them very dry with a clean kitchen towel or paper towels.
For the best flavor, let the seasoned chickpeas sit for 10 minutes before baking.
If you do not have tahini sauce, mix 1/4 cup tahini, 2 tablespoons lemon juice, 1 clove minced garlic, and 3-4 tablespoons of water until smooth.
