Make this hearty, flavorful vegan lentil taco soup entirely in one pot for simple preparation and easy cleanup. This recipe uses common pantry staples for a quick weeknight dinner.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup brown or green lentils, rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 cup frozen corn
  • 2 tablespoons taco seasoning (ensure it is vegan)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • Juice of 1 lime

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the rinsed lentils, diced tomatoes (with juice), black beans, vegetable broth, corn, taco seasoning, cumin, chili powder, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25 to 30 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.
  6. Remove the pot from the heat. Stir in the fresh lime juice.
  7. Taste and adjust salt and pepper if needed before serving.

Notes

  • For a thicker soup, mash about 1 cup of the cooked lentils against the side of the pot before serving.
  • This soup freezes well for future meals. Cool completely before transferring to airtight containers.
  • Serve with toppings like avocado, fresh cilantro, or vegan sour cream.
