A simple, comforting casserole featuring mixed vegetables in a rich, cheesy sauce, perfect for a weeknight dinner or potluck side dish.

  • 2 cups frozen mixed vegetables (broccoli, carrots, peas, cauliflower)
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Cook the frozen vegetables according to package directions until tender-crisp. Drain well and set aside.
  3. Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook until soft, about 5 minutes.
  4. Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
  5. Gradually whisk in the milk until the mixture thickens into a smooth sauce.
  6. Remove the saucepan from the heat. Stir in the shredded cheese, salt, and pepper until the cheese melts completely.
  7. Fold the cooked vegetables into the cheese sauce. Pour the mixture into the prepared baking dish.
  8. Sprinkle the breadcrumbs evenly over the top of the casserole.
  9. Bake for 20 to 25 minutes, or until the topping is golden brown and the casserole is bubbly.

Notes

  • For a richer flavor, use half-and-half instead of milk.
  • If you prefer a tangier taste, substitute half of the cheddar cheese with Gruyère or Monterey Jack.
  • To make this a main course, stir in 1 cup of cooked quinoa or shredded cooked chicken before baking.
