Make flavorful vegetable fried rice using day-old rice and top it with a bright, homemade sesame ginger sauce.

  • 3 cups cooked day-old white rice
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil
  • For the Sauce:
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Prepare the sauce: Whisk together soy sauce, rice vinegar, toasted sesame oil, grated ginger, and honey/maple syrup in a small bowl. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chopped onion and cook for 2 minutes until softened.
  3. Add the mixed vegetables and minced garlic. Stir fry for 3 to 4 minutes until the vegetables are tender-crisp.
  4. Push the vegetables to one side of the pan. Pour the beaten eggs onto the empty side and scramble quickly until just set. Break the eggs into small pieces and mix with the vegetables.
  5. Add the day-old rice to the pan. Break up any clumps with your spatula. Stir fry for 5 minutes, allowing the rice to heat through and slightly crisp.
  6. Drizzle the 2 tablespoons of soy sauce and 1 teaspoon of sesame oil over the rice mixture. Toss everything together until evenly coated.
  7. Stir the prepared sauce mixture again, then pour it into the pan. Immediately add the cornstarch slurry and stir constantly for about 1 minute until the sauce thickens slightly and coats the rice.
  8. Remove from heat and serve immediately.

Notes

  • Using cold, day-old rice prevents the fried rice from becoming mushy.
  • For a vegan version, omit the eggs and add 1/4 cup firm tofu, crumbled, when cooking the vegetables.
  • Adjust the ginger amount in the sauce to match your preference for spice.
