  • 1 cup chopped onion
  • 1 bell pepper, chopped
  • 1 cup chopped zucchini
  • 1 cup chopped yellow squash
  • 1 cup chopped tomatoes
  • 1/2 cup chopped mushrooms
  • Salt and pepper to taste
  • 4 large eggs
  • Optional: shredded cheese, fresh herbs

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper and cook until softened, about 5 minutes.
  3. Add zucchini, yellow squash, tomatoes, and mushrooms. Cook until vegetables are tender-crisp, about 7-10 minutes. Season with salt and pepper.
  4. Create four wells in the vegetable mixture. Crack an egg into each well.
  5. Cover the skillet and cook until egg whites are set and yolks are cooked to your liking, about 5-7 minutes.
  6. Garnish with shredded cheese and fresh herbs, if desired.
