Ingredients
Scale
8 ounces fresh goat cheese (chèvre), softened
4 tablespoons heavy cream
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons honey, for drizzling
2 tablespoons shelled pistachios, roughly chopped
Instructions
Place the softened goat cheese, heavy cream, olive oil, salt, and pepper into a food processor.
Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the cheese is completely smooth and airy.
Transfer the whipped goat cheese to a shallow serving bowl.
Drizzle the top evenly with the honey.
Sprinkle the chopped pistachios over the honey.
Serve immediately with crackers, crostini, or vegetable sticks.
Notes
If you do not have a food processor, you can use a stand mixer with the whisk attachment, but the texture may be slightly less airy.
For a savory variation, substitute the honey with finely chopped sun-dried tomatoes and fresh thyme.
To make this ahead, store the plain whipped cheese in an airtight container in the refrigerator for up to three days. Add toppings just before serving.
