  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 1 cup heavy cream
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5 to 7 minutes. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened, about 4 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth, diced tomatoes, sun-dried tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Add the broken lasagna noodles to the boiling broth. Reduce heat to medium-low, cover, and simmer for 10 minutes, stirring occasionally to prevent sticking.
  5. Return the cooked chicken to the pot. Stir in the heavy cream and ricotta cheese until smooth. Heat through for 2 to 3 minutes, but do not boil after adding cream.
  6. Stir in the mozzarella cheese until melted and the soup is creamy.
  7. Add the fresh spinach and stir until wilted, about 1 minute. Serve immediately.

Notes

  • For a thicker soup, use 1/2 cup less chicken broth initially.
  • You can substitute rotisserie chicken for fresh chicken breasts to save cooking time.
  • Stir the ricotta cheese in off the heat to prevent it from clumping.
