1 recipe for double pie crust
6 cups thinly sliced peeled apples (about 6 medium apples)
3/4 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
2 tablespoons unsalted butter, cut into small pieces
1 large egg, beaten (for egg wash)
1 tablespoon milk (for egg wash)
1 tablespoon coarse sugar (optional, for topping)
Instructions
Prepare your double pie crust according to your favorite recipe. Divide into two discs, wrap in plastic wrap, and chill for at least 30 minutes.
In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples evenly.
Preheat your oven to 400°F (200°C).
On a lightly floured surface, roll out one disc of pie dough into a 12-inch circle. Carefully transfer it to a 9-inch pie plate. Trim the edges, leaving about a 1/2-inch overhang.
Pour the apple filling into the pie crust. Dot the top of the filling with the small pieces of butter.
Roll out the second disc of pie dough into an 11-inch circle. Cut it into 1/2-inch wide strips.
Arrange the dough strips over the apple filling in a lattice pattern. Trim the ends of the strips and crimp the edges of the pie to seal.
In a small bowl, whisk together the beaten egg and milk. Brush this egg wash over the lattice crust.
Sprinkle with coarse sugar, if desired.
Place the pie on a baking sheet (to catch any drips). Bake for 20 minutes at 400°F (200°C).
Reduce the oven temperature to 375°F (190°C) and continue baking for another 30-40 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, you can loosely tent it with foil.
Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.
Notes
Any firm apple variety like Honeycrisp, Fuji, or Granny Smith works well for this pie. A mix of varieties can add complexity to the flavor.
For a deeper flavor, you can add a pinch of ground cloves or allspice to the apple filling.
Ensure your pie crust is well chilled before rolling to prevent it from becoming tough.
If your oven tends to run hot, consider using a pie shield or aluminum foil around the edges of the crust to prevent over-browning.
