  • 1 3/4 cups granulated sugar
  • 3/4 cup packed light brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 large egg (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
  3. Beat in the 4 large eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the gluten-free flour blend, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  6. Prepare the peanut butter swirl mixture: In a medium bowl, beat together the creamy peanut butter, powdered sugar, and the remaining 1 large egg until smooth.
  7. Spread half of the brownie batter into the prepared pan. Dollop spoonfuls of the peanut butter mixture evenly over the batter.
  8. Spread the remaining brownie batter over the peanut butter layer.
  9. Using a knife or skewer, gently swirl the peanut butter mixture into the chocolate batter to create a marbled effect. Do not overmix.
  10. Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  11. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang and cutting them into squares.
