Follow these steps to create a visually appealing and flavorful layered iced strawberry matcha latte using homemade strawberry syrup.

  • 1/2 cup fresh or frozen strawberries
  • 2 tablespoons granulated sugar (for syrup)
  • 1 tablespoon water (for syrup)
  • 1 teaspoon high-quality matcha powder
  • 2 tablespoons hot water (175°F / 80°C)
  • 1 teaspoon sweetener (honey, simple syrup, or agave, adjust to taste)
  • 1 cup milk or milk alternative (oat milk recommended)
  • Ice cubes

Instructions

  1. Make the strawberry syrup: Combine strawberries, sugar, and 1 tablespoon of water in a small saucepan. Heat over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens slightly (about 5-7 minutes). Mash the berries as they cook. Strain the mixture through a fine-mesh sieve, pressing down on the solids to extract the syrup. Discard solids. Let the syrup cool completely.
  2. Prepare the matcha: Sift the matcha powder into a small bowl or matcha bowl to remove clumps. Add 2 tablespoons of hot water. Whisk vigorously in a ‘W’ or ‘M’ motion until the mixture is smooth and frothy with no visible clumps. Stir in your chosen sweetener (honey, simple syrup, or agave).
  3. Assemble the drink: Place ice cubes into a tall glass. Pour the cooled strawberry syrup over the ice, filling the bottom third of the glass.
  4. Gently pour the milk or milk alternative over the syrup and ice.
  5. Slowly pour the prepared matcha mixture over the top of the milk. Pouring slowly over the back of a spoon helps create distinct layers.
  6. Serve immediately with a straw.

Notes

  • Use ceremonial or high-grade matcha for the best color and least bitterness in lattes.
  • Oat milk provides the creamiest texture that complements the matcha well.
  • If you prefer a blended drink, combine all ingredients (except ice) in a blender and pulse until smooth, then pour over ice.
  • Adjust the amount of sweetener in the strawberry syrup based on the sweetness of your strawberries.
