Instant Pot Cabbage and Sausage Soup

Make a hearty, one-pot cabbage and sausage soup quickly using your Instant Pot. This recipe uses the sauté function and pressure cooking for fast results.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage or kielbasa, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 head green cabbage (about 3 pounds), chopped
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried rosemary

Instructions

  1. Set the Instant Pot to the Sauté function. Add olive oil. When hot, add the sliced sausage and cook until lightly browned, about 3 to 4 minutes. Remove the sausage and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant. Press Cancel.
  3. Return the sausage to the pot. Add the chopped cabbage, chicken broth, diced tomatoes, thyme, salt, pepper, and rosemary. Stir gently to combine.
  4. Secure the lid and set the vent to Sealing. Select Manual or Pressure Cook on High for 8 minutes.
  5. When the cooking cycle finishes, allow the pressure to naturally release for 10 minutes, then carefully move the vent to Quick Release to remove any remaining pressure.
  6. Open the lid. Stir the soup well before serving.

Notes

  • For a lower carb soup, omit potatoes if you add them.
  • You can add 1 cup of drained and rinsed cannellini beans during the last 5 minutes of pressure cooking for extra protein.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the soup after the pressure is released. Simmer on Sauté mode for 2 minutes until thickened.
