1/2 cup butter
1 cup granulated sugar
1 cup light corn syrup
1 teaspoon vanilla extract
1 cup creamy peanut butter
6 cups puffed rice cereal
Instructions
Line an 13×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large saucepan, melt the butter over medium heat.
Stir in the sugar and corn syrup. Bring the mixture to a rolling boil, stirring constantly. Boil for exactly one minute.
Remove the saucepan from the heat. Stir in the vanilla extract and peanut butter until completely smooth.
Pour the peanut butter mixture over the puffed rice cereal in a large bowl. Stir gently until the cereal is evenly coated.
Press the mixture firmly and evenly into the prepared baking pan. Use wax paper or lightly buttered hands to press it down.
Chill in the refrigerator for at least 2 hours, or until firm.
Lift the bars out of the pan using the parchment paper overhang. Cut into squares before serving.
Notes
For a slightly different texture, you can substitute honey or maple syrup for the corn syrup, but you may need to adjust the boiling time slightly.
Store leftovers in an airtight container at room temperature for up to 4 days.
You can add 1/2 cup of mini marshmallows or chocolate chips to the cereal mixture before pressing into the pan.
