1 cup warm milk (105-115°F)
2 1/4 teaspoons active dry yeast
1/4 cup granulated sugar
1 large egg, room temperature
1/4 cup unsalted butter, melted
1 teaspoon salt
3 1/2 cups all-purpose flour, plus more for dusting
1 cup raisins
2 tablespoons ground cinnamon
1/4 cup packed brown sugar
Instructions
Combine the warm milk and yeast in a large bowl. Let it sit for 5 minutes until foamy.
Stir in the granulated sugar, egg, melted butter, and salt into the yeast mixture.
Gradually add the flour, mixing until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic.
Flatten the dough into a rectangle. Sprinkle the raisins, cinnamon, and brown sugar evenly over the surface. Roll the dough tightly into a log, pinching the seam closed.
Place the dough seam-side down in a greased 9×5 inch loaf pan.
Cover the pan loosely with plastic wrap and let it rise in a warm place for 1 to 1.5 hours, or until the dough has doubled in size.
Preheat your oven to 375°F (190°C) during the last 20 minutes of rising.
Bake for 30 to 35 minutes, or until the top is golden brown and the internal temperature reaches 200°F (93°C).
Remove the bread from the pan immediately and let it cool completely on a wire rack before slicing.
Notes
For a richer flavor, use whole milk instead of low-fat milk.
If you prefer a sweeter crust, brush the top of the loaf with melted butter immediately after removing it from the oven.
To keep the bread soft longer, wrap the cooled loaf tightly in plastic wrap before storing.
