A simple recipe for flavorful Thai peanut noodles packed with crisp, fresh vegetables for texture.

  • 12 oz dried noodles (spaghetti, linguine, or rice noodles)
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce (use tamari for gluten-free)
  • 3 tablespoons rice vinegar
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup hot water (or more, to thin)
  • 1 large carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded red cabbage
  • 1/2 cup snow peas, trimmed
  • 1/4 cup chopped scallions, for garnish
  • 2 tablespoons chopped peanuts, for garnish

Instructions

  1. Cook the noodles according to package directions. Drain them and rinse immediately with cold water to stop cooking and remove starch. Set aside.
  2. Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, lime juice, ginger, and garlic.
  3. Add the hot water one tablespoon at a time, whisking until the sauce reaches a smooth, pourable consistency. Taste and adjust seasoning if needed.
  4. In a large bowl, combine the cooled noodles, julienned carrot, sliced red bell pepper, red cabbage, and snow peas.
  5. Pour the peanut sauce over the noodles and vegetables. Toss everything together until the noodles and vegetables are evenly coated.
  6. Serve immediately or chill for later. Garnish each serving with chopped scallions and peanuts.

Notes

  • For a vegan option, use maple syrup instead of honey.
  • To keep vegetables crunchy, do not cook them; add them raw to the cooled noodles.
  • Add cooked, cubed tofu or shredded chicken for extra protein.
  • If using rice noodles, follow package directions for soaking or boiling.
