You need a creamy, smooth, and fluffy vanilla buttercream frosting that holds its shape for piping on cakes and cupcakes. This easy homemade frosting recipe is your go-to for perfect results every time.

Ingredients

Scale
  • 1 cup (2 sticks or 226g) unsalted butter, softened to cool room temperature
  • 4 cups (480g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 2 to 4 tablespoons heavy cream or whole milk
  • Pinch of salt

Instructions

  1. Place the softened butter into the bowl of a stand mixer fitted with the paddle attachment, or use a large bowl with a hand mixer. Beat the butter on medium speed for 3 to 5 minutes until it becomes very pale, light, and fluffy. This step incorporates air, which is key for a fluffy vanilla buttercream frosting.
  2. Stop the mixer. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until just combined after each addition. Scrape down the sides and bottom of the bowl frequently.
  3. Add the vanilla extract and the pinch of salt. Mix on low speed until incorporated.
  4. Add 2 tablespoons of heavy cream or milk. Increase the mixer speed to medium-high and beat for 3 to 5 minutes. This extended whipping time is crucial for achieving a smooth buttercream consistency that is perfect for piping.
  5. Check the texture. If the frosting seems too stiff, add the remaining cream, one teaspoon at a time, until you reach your desired spreading or piping consistency. If it seems too soft, add a quarter cup more sifted powdered sugar.
  6. Beat on medium-high for one final minute to ensure everything is fully combined and light. Use immediately for frosting cakes or vanilla frosting for cupcakes.

Notes

  • Use cool, but truly soft, room temperature butter. If the butter is too warm, your frosting will be greasy and thin.
  • Sifting the powdered sugar prevents lumps and helps you achieve a smooth buttercream texture quickly.
  • For a stronger vanilla flavor, use vanilla bean paste instead of extract.
  • If your frosting separates or looks curdled after adding the liquid, continue beating it on medium-high speed; it often comes back together into a creamy texture.
